Locally owned Chico restaurant is accepting resumes from qualified candidates for the Executive Chef position. Executive Chef is responsible for leading a team that delivers high quality, great tasting, and innovative food based around a unique concept. This position allows for culinary freedom as well as growth within the organization. . The food is driven by the seasons, with an Italian/ Mediterranean focus. We have built relationships with many local farmers and are proud to put their name on our menu.
2 years experience as a Sous or Executive Chef with a proven record of success and stable work history
Contribute to building sales and guest count through the management of team members and positive guest experience
Oversee daily kitchen operations, including proper food safety, sanitation, equipment usage, station set-up/ break down.
Ability to create, cost, implement and maintain profitability of menu items
Supervise daily lunch and dinner menu item production, including organizing and prioritizing prep/par lists
Quality control including tasting profile standards, portion control and supervision of staff for correct production and plating methods
Requisition of foodstuffs including proteins, produce, dry pantry, and smallwares based on forecasting of consumption, historical sales data and trends of growth
Supervision, instruction, development and control of staff to maintain cost of labor systems that lead to restaurant profitability
Proactively train incoming and existing team members, organize workloads and utilizes insight based upon work load expectations and skill levels of available employees
Works directly with the GM for BOH staff scheduling and labor cost control strategies
Maintain BOH sanitation, health and safety policies and protocol including, but not limited to adherence to Health Department Standards, CAL OSHA, and general housekeeping policies
