I recently went on a food plan where I'm eating egg whites only for protein. This means I'm not using the yolks.
I separate them and put them in a jar and put it in the refrigerator. The ones at the bottom of the jar are less than three weeks old, and the top as recent as today. They've always been kept refrigerated.
I don't want to throw it away because I figure someone can use it for something, cooking, making pet food, etc...
