A new, full service, luxury, boutique hotel in the Amador Gold and Wine country is seeking a creative, ambitious and aspiring star chef for the opportunity to take our new restaurant to five-star restaurant/steakhouse ranking. This hotel will be opening late June and needs a chef able to create a menu on a par with the historic luxury the entire property will become known for and craft a reputation for both the hotel and the chef selected.
EXPERIENCED eexcutive CHEF with at least two years experience working in an upscale restaurant.
Responsibilities:
Ability to prepare a steakhouse menu to a five star
standard; as well as create their own five- star menus & wine pairing menus
Ability to create and work well with staff-meeting not only our high standards but a ensure a positive enviroment
Exhibit working knowlege of food cost, best practices (line checks), and purchasing.
Supervise kitchen personnel
Ensure food items are prepared according to our standards of quality, consistency and time lines.
Maintain sanitation procedures and organization of work area adhering to all OSHA regulations.
Meet all health department standards for safe food handling.
Operate equipment safely determined by position and OSHA regulations.
Purchase various food products as par levels dictate.
Maintain food storage, receiving, rotating & stocking as par levels dictate.
Exhibit working knowlege of scheduling
Requirements:
Prefer a minimum of two years (or greater) of experience cooking in an upscale dining establishment.
Ability to understand high-volume operations.
Possess strong interpersonal and organizational skills.
Ability to walk, stand and/or bend continuously to perform essential job functions.
Ability to work under pressure and deal with stressful situations during busy periods.
Steakhouse experiences a plus.
